Peach Kuchen (Nancy's Fav)
Dough:
4 cups Flour
1 teaspoon salt
1/2 cup shortening
1/2 cup sugar
1 pkg yeast
3 eggs, room temp. beaten
1 cup warm milk
Mix: flour, sugar salt and shortening into a fine crumb
Dissolve: yeast in 1/2 of the warm milk, once dissolved add the rest of the milk and beaten eggs.
Form a well in the bowl with the dry mix and pour liquid in and mix till moist.
DON'T OVER WORK, then let it rest in a warm place. Once the custard is done this will be too.
Custard:
6 eggs beaten
1 1/2 Tablespoons flour
1 1/2 cups sugar
3 cups whipping cream
Cook in a double boiler or in a pan and stir often on low heat till thick. Mix the flour and sugar together...I added this to the eggs in a pan and then the cream and proceeded to mix and cook till thick.
Divide the dough in 6 pieces and roll out like a pizza and then press in pan and up the sides to almost the top
Add peaches or your favorite fruit or cottage cheese (drained)
Then add 2 scoops of custard
Sprinkle with cinnamon and a bit of nutmeg
Bake in a 350 oven for about 25 - 30 minutes (as long as the crust doesn't burn)
Makes 6-9 inch pies

Mix & Spoon on top:
1 cup heavy cream
2 eggs
Sprinkle Topping:
4 cup sugar
1 cup crushed graham crackers
2 tsp. cinnamon mixture
Bake at 350 for about 25 minutes. Until done!

1 egg in cup - fill to 1 ¼ cup with milk
1 cup shortening (Butter flavor Crisco)
Make dough and roll out into 12 pie plates. Covering the bottom only of the pie plate. Poke crust with fork.
Topping:
6 eggs
1 ½ cups sour cream
1 ½ cups sugar
Beat the above and add 1 large box vanilla instant pudding. ***this is different!!!
Spread the above evenly over the above 12 pie crusts.
Sprinkle each pie with ¼ cup sugar and sprinkle on cinnamon.
Sprinkle on crushed gram cracker crumbs over the top
Bake at 350 for about 25 minutes.

Halupsi
1 cup rice:
cook for 10 minutes. Drain, rinse
Mix rice with remaining ingredients. Set aside.
1 pound lean ground beef
1 medium onion
1 teaspoon salt
1/2 teaspoon pepper
1 large head green cabbage:
Blanch several cabbage leaves in a large kettle of boiling water for 2-3 minutes. Remove leaves and drain in
colander. Repeat process until all leaves are blanched.
Spoon beef mixture onto a cabbage leaf. Roll up leaf and place in greased baking dish tucking sides of cabbage under the roll. Repeat process using remaining beef and cabbage.
Tomato juice or V-8 juice:
Pour tomato juice over cabbage rolls in baking dish until several inches deep. Do not submerge cabbage rolls.
Bake uncovered at 300 degrees for 2 hours.

Dough: Form 1.5 inch balls out of the dough. Let raise on greased cookie sheet.

6 1/2 cups flour
1 tablespoon salt
1/3 cup
butter
Season porkchops or chicken with salt and pepper and brown in skillet. Place browned meat in roaster.
Pour 1 can of cream of chicken, cream of celery, or cream of mushroom mixed with 1/2 can milk or water over meat. Cover and bake meat at 350 degrees for 1 hour.
Place raised dumplings single layer over meat. Bake uncovered another 20 minutes or until golden brown.

1/2 cup sliced green onions OR chopped apple instead.
1/3 cup flour
1 egg
1/2 tsp salt & a pinch of pepper
Combine all ingredients. Heat 2 Tbsp. oil in a hot skillet. Pour batter (1/4 cup at a time) into the oil.
Spread to flatten. Fry on one side, then flip to fry on second side.

1/4 teaspoon Dijon mustard
1 tablespoon white vinegar
2 tablespoons milk
1/2-3/4 teaspoon sugar
1 tablespoon chopped fresh parsley
2 tablespoons chopped fresh dill
1/4 teaspoon pepper & 1/4 teaspoon salt, to taste
DIRECTIONS:
Place the cucumbers, onions and tomatoes in a large bowl. Set aside. In a small bowl, whisk together all dressing ingredients. Pour over salad mixture. Toss to coat well. Chill at least 2 hours before serving.
